A wonderful Potato soup. A favorite around the house. Throw the Potato in the oven when you get home and settle in. Then prepare this soup for a wonderful dinner. This makes a great winter meal for two.
Growing up in New Mexico, one of my favorite soups has always been Cream of Green Chili Chicken Soup. It is hard to find in New Mexico and impossible to find outside of the state.
Sweet minty carrots. A great side low in calories and fat but high in taste. A wonderful side dish that anyone can love. A little high in sugar but it is all natural sugars. Also instead of boiling you can steam the carrots until tender.
