Baked Potato Soup

 

Rich and Creamy Potato Soup to warm the soul.

A favorite around the house. Throw the Potato in the oven when you get home and settle in. Then prepare this soup for a wonderful dinner. This makes a great winter meal for two.

Makes 4 servings

Ingredients

  • 2 cups 2% Milk
  • 1 large potato
  • 2 medium slices of bacon
  • 1/4 cup butter
  • 2 cups 2% milk
  • 4 tbs all-purpose flour
  • 1 cup vegetable broth
  • 1/4 cup low-fat plain yogurt
  • 1/4 cup green onions, chopped
  • 1 garlic clove, minced
  • 1/3 cup cheddar cheese
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  • Preheat oven to 400 degrees, place potato in oven for 40 minutes. Remove from oven and cube. Remove skin if you do not like the skin.
  • Cook bacon and drain and set aside.
  • In large pot melt butter.
  • Add milk and whisk in Flour.
  • Stir constantly until it thickens.
  • Add all remaining ingredients except cheese.
  • Cook on medium-low to low, stirring occasionally for 20 minutes.
  • Mix in cheese or serve and garnish with cheese.

    The iron comes from the Potato. 1 large Potato gives you 18% of your daily value of Iron. The iron though is non-hem Iron and is harder for you body to absorb than iron that comes form animals. The best source of Iron comes form the liver on an animal. So if you like liver you are set. NutritionData.com is a good source of Nutritional Information.
